As we all know, salad dressing is made from olive oil, vinegar, lemon juice and lemon zest, and this is why it is often used in Italian restaurants and cafés to add a savoury, tangy flavour to food and dishes.

The ingredients that are used in this recipe are the following: 1 small yellow or white onion, diced 1 small tomato, diced 2 tablespoons olive oil 1 small carrot, peeled and diced 2 medium carrots, peeled, chopped 1/4 cup basil, chopped (or 1 cup chopped parsley) 1/2 teaspoon dried oregano or 1 teaspoon dried basil leaves (or ½ teaspoon dried rosemary) 2 tablespoons chopped fresh thyme 1 tablespoon fresh basil leaves or 1 tablespoon dried basil Leaves (or ¼ teaspoon dried dried rosemaria) 1 teaspoon fresh parsley leaves (optional) 1 large clove garlic, peeled (or 2 tablespoons minced garlic) Salt and pepper to taste 1 tablespoon chopped fresh parsly leaves 1 tablespoon freshly grated parmesan cheese (optional), to taste Instructions In a medium saucepan, heat the olive oil over medium heat.
Add the onion and tomato and cook for a few minutes, until softened.
Add in the carrot, carrots and basil, and saute for about 3 minutes, or until the vegetables have softened.
Season with salt and pepper and cook until the carrots are slightly soft.
Add oreganos, basil, lemon zess, lemon, oreganon and oreganone, and cook on medium heat for about 5 minutes.
Add basil leaves and parsley and cook another minute.
Remove from the heat and add the fresh herbs, thyme and parsly.
Season to taste with salt.
Heat the saucepan again, add the garlic and sauté for about 2 minutes.
Season the sauce with salt again and stir in the parmesant cheese.
Return the sauce to the sauce pan and heat over low heat for another 2 minutes, stirring occasionally.
Serve warm with a spoonful of the dressing.
